Turkey and Groat Soup (Krupnik)

Krupnik is a hearty polish soup that is comfort food to the extreme.  You can use ground turkey, or chicken, or even leftover chicken meat.  If you can't find groats, feel free to sub out barley.

Serves- 8

Ingredients-



1 lb ground turkey
2 zucchini, sliced into quarters and diced
3 carrots, peeled and diced into moon shapes
3 stalked celery diced
1 onion diced
1 package frozen mixed veg
Baby potatoes chopped into fourths
1-2 c groats or barley (rinsed) *see note
8-12 cups chicken stock or bone broth
1 T garlic powder
Pinch of oregano
Salt and pepper to taste

Directions- 



Brown your ground meat then transfer to a crock pot. Add in all the rest of your ingredients and cook on low 8 hours or high on 4 or until groats are tender.


Note- soaking your grains with 1 T acidic medium on the counter overnight not only reduces harmful phytates but also lessens cooking time.
