Spiced Liver Sandwich
A tasty way to eat liver, this spiced sandwich makes a great lunch. Don't forget to soak your liver beforehand. This one step helps take out some of the "funk" liver taste.
Serves-1
Ingredients-
1 lemon, juiced
1/2 c milk
1 slice calf liver
2 cloves of garlic, minced
1 t dried mint
1 t cumin
1 t cinnamon
Salt and Pepper to taste
1-2 T olive oil
1 bell pepper (any color) sliced thin
Lettuce
Sourdough bread
Directions-
An hour before, soak your liver in lemon juice and milk. After soaking, slice into thin slices.
Heat your pan to medium heat and add in half of your oil. Sautee your pepper slices until soft (3-5 min). Remove from the pan. Add in a little more oil, your liver and spices. Sautee 5 min, or until liver is browned and done.
Layer the liver, peppers, and lettuce into your sourdough bread.
