Simple Roast Chicken
This roasted chicken is perfect for a Sunday dinner. Simple, easy and elegant it's always a winner. Remember to save your bones to make a bone broth for another meal!
Serves- 4-6
Ingredients-
1 whole fryer chicken
1 T olive oil
4 T butter, softened
1 T poultry seasoning
2 t paprika
Salt and Pepper to taste
Seasonal veggies
Directions-
Preheat your oven to 350.
Place your chicken in a large roasting pan and pat dry with a paper towel. Take your softened butter and place it between the skin and the meat making sure to evenly divide as best as you can throughout. Drizzle your olive oil on the outside skin of the chicken and season with your spices. Gently rub everything in.
Place your veggies on either side of your chicken and roast for 90 minutes or until chicken is cooked through. (The best way to tell is with a meat thermometer) .
