Poke Bowls
This Poke Bowl makes a quick and delicious lunch and a serious dose of protein, omega 3, and B 12.
Serves 4
Ingredients-
1 cup rice (rinsed, cooked according to package directions), or sub with cauli rice
1 lb sushi grade Ahi Tuna, sliced into small, bite sized chunks.
1 cucumber, chopped
1 avocado, sliced
4 radishes, sliced
2 limes, juiced
Salt and Pepper to taste
Optional toppings-
Coconut aminos or soy sauce
Black sesame seeds
Everything but the bagel seasoning
Directions-
Marinate your tuna in lime juice while you prep your rice and veg.
Cook your rice and divide between 4 bowls.
Top with the rest of your ingredients and toppings.
