Pineapple Chicken Tacos
These tacos make a fun change to your Taco Tuesday rotation. The pineapple gives a lovely subtle zing and pairs beautifully with the chicken. Serve with homemade corn tortillas and guacamole.
Serves- 4
Ingredients-
1 lb boneless, skinless chicken breast
1 c fresh or canned pineapple (chopped)
1/2 onion, chopped
2 garlic cloves, minced
1 T chili powder
1/2 jalapeno, minced (can omit for less spice)
Salt and Pepper to taste
1/2 c water
Serve with-
Tortillas (corn tortillas recipe HERE)
Chopped cilantro
Diced avocado
Lime juice
Directions-
Place your chicken, pineapple, onion, garlic, chili powder and spices, jalapeno and water in your instant pot. Cook for 20 min, natural release for 10. (You can also do this in your slow cooker).
Shred your chicken and serve in tortillas with cilantro, avocado and lime juice.
