Not Offal Meatloaf
This meatloaf is a great way to work nutritious organ meats (offal) into your diet. The ground beef hides any flavors the organ meat might have making it family friendly and frugal as well!
Our grandparents knew the importance of eating offal (mostly liver) weekly. Not only is it a frugal way to stretch the meat, but liver is an absolute powerhouse of nutrition.
This meatloaf pairs perfectly with a pan gravy, mashed potatoes and green beans for a cheap, easy weeknight meal.

Serves 6-8
Ingredients-
1 c quick oats OR sourdough bread crumbs
1/2 - 3/4 c whole milk
2 lb ground meat (beef, pork, or a mixture of both)
1/4- 1/2 lb ground liver (see note)
1/2 an onion, grated with the juice
1 carrot, peeled and grated
1 c quick oats OR sourdough bread crumbs
Pinch each- oregano, sage, thyme
Salt and Pepper to taste
Ketchup (fermented, homemade, or sugar free)/
Directions-
Soak your oats, or breadcrumbs , in milk. Mix into this all the rest of your ingredients EXCEPT the ketchup until well blended. Place in a large pan greased with butter and form into a loaf. Top with ketchup. Bake in a preheated oven at 350 for one hour.
Note- you can hand chop your liver or use a grinder or food processor. You may also be able to find "dressing mix" which is a mixture of chopped organ meats. Just be sure to read your ingredients list because some contain lots of fillers and sugars.
