Lazy Galumpki
Galumpki is the Polish version of cabbage rolls. I'm going to tell you a secret though, I hate, loathe and despise making the cabbage into rolls, so I tried it out making it lasagna style and let me just say....SERIOUS comfort food without the work and hassle.
Serves- 8
Ingredients-
1 large head of green cabbage
1 cups cooked rice
1 large can crushed tomatoes
2 lb ground beef and pork mix
1 t cinnamon
1 t cumin
1 large onion, chopped
3 cloves garlic, minced
Salt and pepper to taste
1 can tomato sauce
Directions-
Bring a large pot of water to boil. Blanch your cabbage leaves for 5 minutes or until tender. Remove from water and set aside.
Brown your meat. Add in all of your spices,garlic , onion and crushed tomatoes and simmer another 10 minutes.
Remove from heat and combine your meat mixture with your rice.
Gently take your cabbage leaves apart and cover the bottom of a large casserole dish with a layer of cabbage leaves. Add in 1/3 of your beef rice. Repeat 2 more times tucking in cabbage leaves as you go.
Top with tomato sauce and cover with foil.
Bake at 375 for 1 hour - 90 minutes or until cabbage leaves are tender.
