Corn Tortillas
Nothing is better than a warm, fresh tortilla. These are so good that my kids love to just add a little butter while they are still warm, roll up and eat plain. Perfect for Taco Tuesdays, or as a side dish to go with a hot bowl of pinto beans.
Makes 10-12 tortillas
Ingredients-
2 c Masa Harina (you can use blue masa harina for a fun twist)
1 1/2 c hot water
1 t salt
Directions-
In a large bowl mix together your Masa and salt. Slowly stir in your water and knead for about 2 minutes. You want it to get the dough soft and smooth. If it's too wet, add more Masa, if it's too dry add a little more water (a Tablespoon at a time).
Cover with a damp towel and let rest for 15 minutes.
Portion in small golf sized balls and preheat your pan to medium heat (cast iron works best in my opinion).
If you have a tortilla press-
Layer 2 pieces of wax paper on each side, place your ball in the middle and press.
If you don't have a tortilla press-
Layer 1 ball between 2 sheets of wax paper, and gently press down using a rolling pin to make a circular shape.
Your pan should be nice and hot now. To test, sprinkle a drop of water in your pan. If it sizzles and evaporates you are good to go.
Cook your tortilla dough 1-2 min per side or until gently browned.
Serve warm.
