Broccoli Cheddar Egg Muffins
These egg muffins are great to batch cook on a Sunday and store in the fridge for super quick and easy grab and go breakfast or snack. They are also very adaptable, so feel free to use other veggies and meats.
Serves- 6
Ingredients-
1/2 c broccoli, chopped into very small pieces
1/4 c cooked bacon, chopped
1/2 c shredded cheddar
5 eggs, whisked with salt and pepper to taste
Directions-
Preheat your oven to 350 and grease a 6 cup muffin pan. Put your broccoli, cheese and bacon evenly in each compartment. Top with your eggs. Bake for 15-20 min, or until a toothpick comes out clean.
